Mixed berries with palm sugar crumbs

Light, sweet and fruity, this beautiful dish made with mixed berries and a delicious pistachio palm sugar crust puts a healthy twist on traditional desserts.

Method

1.Preheat oven 180°C (160°C fan-forced). Line a baking tray with baking paper.
2.Put the pistachios, palm sugar, coconut and vanilla bean into a small food processor and blend until crumbs form.
3.Put the crumbs onto the lined baking tray and toast in the oven for 10 minutes or until the palm sugar is beginning to melt and clump together.
4.Serve the crumbs sprinkled over mixed berries with a dollop of yogurt.

Not suitable to freeze or microwave.
