Ingredients

Garlic and chilli dressing

Method

1.Preheat oven to 180°C (160°C fan-forced).
2.Brush both sides of pita with oil; place on 2 oven trays.
3.Bake, uncovered, for about 15 minutes, or until crisp. Cool; break into pieces.
4.In a large bowl, combine tomato, avocado, corn and beans.
5.Meanwhile, to make garlic and chilli dressing: Combine ingredients in a screw-top jar; shake well.
6.Just before serving, add pita pieces and dressing to tomato mixture; toss gently to combine. Place in a lettuce-lined serving bowl.

Dressing can be made 1 day ahead; chill, covered. Recipe can be 3 days ahead up to step 3; store in airtight container.
