Butter cream (1 quantity)


1.Preheat oven to moderate. Grease and line two 20cm x 30cm lamington pans. Make cakes according to directions on packets, divide mixture between pans, bake in moderate oven about 35 minutes. Stand cakes in pans 5 minutes, turn onto wire racks to cool. Using serrated knife, level cake tops so they are the same height.
2.Turn cakes cut-side down. Using image as reference cut out Joe from cake, place Joe on prepared board, cut-side down, discard remaining cake.
3.Using toothpick or fine skewer, mark Joe’s outlines onto cake.
4.To make butter cream, beat the butter (and any flavouring if using) in a small bowl with an electric beater until the butter is as white as possible. (This will result in a whiter buttercream which will give you better results if colouring it). Gradually beat in half of the sifted icing sugar, then the milk, then the remaining sifted icing sugar.Beat until the butter cream is smooth and spreadable. Keep scraping down the side of the bowl during beating.
5.Tint half the butter cream with pink colouring, reserve 2 tablespoons. Spread face, except mouth, glasses and hair, with pink butter cream.
6.Divide remaining butter cream into seven equal portions, colour each portion with one of the remaining colours.
7.Make sunglasses with some of the black butter cream, create lips with some of the purple butter cream.
8.Tint reserved pink butter cream a darker pink. Spoon into piping bag, pipe outlines for nose, ears and jaw.
9.Make spiked hair with different coloured butter creams. Run a toothpick through hair to create texture.
10.Mark hairline and stubble using a bunch of toothpicks dipped into black colouring.
11.Position licorice strap for sunglasses strap. Position safety pins.

Ensure the safety pins are removed before serving cake. Assemble cakes then, using image as a reference, cut out cake. Use a toothpick to mark out Joe’s features on cake. To make facial stubble, use toothpicks dipped in black colouring.
