1.Preheat oven to 180°C (160°C fan-forced). Line oven trays with baking paper.
2.Using an electric mixer, beat butter, vanilla, caster sugar, brown sugar and egg in a small bowl, until smooth and creamy. Transfer to a large bowl.
3.Stir in combined sifted flour, cocoa and soda in two batches. Stir in coconut, cherries and both chocolates.
4.Roll level tablespoons of dough into balls, place about 5cm apart on oven trays; flatten slightly. Bake about 12 minutes, or until set. Cool on trays.
Suitable to freeze. Not suitable to microwave.
