1.Preheat oven to moderate, 180°C.
2.Lightly grease a deep, 25cm pie plate. In a large jug, whisk together milk, eggs and butter; season to taste.
3.Sift flour into a large bowl. Make a well in the centre and gradually whisk in milk mixture.
4.Mix in 1/2 cup cheese, ham, spinach (squeeze out any excess liquid first), capsicum, onion and parsley.
5.Spoon mixture into prepared pie plate. Sprinkle with remaining grated cheese; bake 45-50 minutes, until firm.
6.Serve pie in wedges with salad.
