Beef and mushroom pies

These delightful beef and mushroom pies are the ultimate comfort food.

1.Preheat oven to 180°C/350°F.
2.Cut one pastry sheet into four squares. Line four oiled 9.5cm (3½-inch) pie tins with pastry; trim excess pastry. Line pastry cases with baking paper, fill with dried beans or rice. Place tins on oven tray; bake 10 minutes. Remove paper and beans. Return to oven; bake 5 minutes.
3.Meanwhile, cook mushrooms in oiled large frying pan until browned. Add beef; cook, stirring, until browned. Stir in sauce; season to taste.
4.Fill pastry cases with beef mixture.
5.Cut four 11cm (4½-inch) rounds from remaining pastry sheet; cover filling with pastry rounds, pressing edges together with a fork to seal. Make small cuts in top of each pie; bake pies about 25 minutes or until browned.

For a more substantial meal, you could serve these pies with potato and pea mash and tomato sauce (ketchup), if you like.
