Baked lemon potatoes

1.Preheat oven to hot, 200°C.
2.In a large bowl, combine potato, lemon juice, ½ cup oil and oregano. Season to taste. Toss well. Spread, in a single layer, on a large baking dish. Add enough water to just cover potato.
3.Bake for 1 hour or until liquid has evaporated. Drizzle with remaining oil and bake for 10-15 minutes until golden. Serve scattered with fresh oregano leaves.
