Preheat a 7-litre air fryer to 200°C/400°F for 3 minutes.
To make cajun spice mixture, combine cumin, coriander, garlic salt, paprika, thyme, oregano and cayenne pepper in a small bowl.
Scrub sweet potatoes and pat dry; cut into long thin wedges. Place in a large bowl with oil and the cajun spice mixture; toss well to coat.
Taking care, place wedges in the air fryer basket; at 200C, cook for 15 minutes, turning halfway through cooking time, or until golden and cooked through.
Sprinkle wedges with salt flakes and chopped coriander; serve with sour cream.

SWEET POTATO WEDGES WITH LIME CHILLI SALT
Preheat a 5.3-litre air fryer to 200°C for 3 minutes. Cut 1kg orange sweet potatoes into wedges. Toss with 2 tablespoons olive oil. Keep temperature at 200°C; set timer for 15-20 minutes. Cook, turning once, until golden and cooked. Combine 2 teaspoons finely grated lime rind, 2 tablespoons salt flakes and 1 teaspoon chilli flakes in a small heatproof bowl; place in air fryer for the last 3 minutes of cooking time to dry out the rind. Serve wedges scattered with lime chilli salt.
