Pumpkin and feta pizza

Incredibly quick and easy to make, these pumpkin and feta pizzas are a great option for a fast mid-week dinner.

Pumpkin and feta pizza
  • 50 gram piece pumpkin
  • 1 teaspoon olive oil
  • 2 tablespoon bottled tomato passata
  • 25 gram crumbled feta cheese.
  • 2 teaspoon finely chopped fresh mint leaves
  • 1 large pita bread

    Slice pumpkin into strips with a vegetable peeler and combine with oil in small bowl.

    Spread pita bread with passata; top with pumpkin and feta.

    Bake pizza at 180°C/160°C fan-forced for about 15 minutes or until pumpkin is tender.

    Serve sprinkled with mint.
