Whisk eggs, buttermilk, sugar and combined sifted flour and soda in a medium bowl until smooth.
Melt 1 teaspoon of the butter in a medium frying pan. Pour â…“-cups of batter into pan; cook pancakes for 2 minutes or until bubbles appear on the surface. Turn; cook other side until browned. Remove from pan. Repeat to make a total of 8 pancakes.
Serve fluffy pancakes with maple syrup, berries or your topping of choice!
