Massaman sausage curry
Serve up this sausage curry for the family and they're sure to request it again! Sausages, potatoes and healthy green beans are simmered in a wonderfully fragrant massaman sauce for a flavoursome meal.

Massaman sausage curry
- 1 tablespoon peanut oil
- 500 gram thick beef sausages
- 1 onion, thinly sliced
- 1/2 cup massaman curry paste
- 270 millilitre can coconut cream
- 1 cup beef stock
- 500 gram baby new potatoes, 5mm slices
- 2 star anise
- 1 stick cinnamon, quill
- 150 gram green beans, trimmed
- 1/4 cup roasted flaked almonds
- steamed rice, to serve
Method
Massaman sausage curry
- 1Heat oil in large saucepan on medium. Cook sausages for 6 minutes, turning, until evenly browned. Remove from pan.
- 2Using same pan increase heat to high. Saute onion for 3-4 minutes, until softened. Add curry paste and cook for 1 minute, stirring, being careful not to burn. Stir in coconut cream and stock with whole spices. Bring to a simmer.
- 3Thickly slice sausages and return to pan with potatoes. Simmer on low heat, covered, for 15 minutes, adding beans for final 2 minutes of cooking time.
- 4Season with fish sauce, sugar and lime juice (see tip). Sprinkle with nuts and serve with rice.
Notes
To enhance the flavours of your finished curry add a little fish sauce for saltiness, brown sugar for sweetness and lime juice for a bright burst of sour. Add 1 teaspoon at a time, tasting as you go to check for balance of flavour.
