Coleslaw

No barbecue is complete without a good coleslaw.

A colourful coleslaw is the staple salad of any good barbecue or pairs perfectly with pulled pork and fried chicken. With cabbage, carrot and an easy tangy mayonnaise dressing this one fits the bill.

Ingredients

Coleslaw
  • 2 tablespoon mayonnaise
  • 1 tablespoon white wine vinegar
  • 2 cup white cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 medium carrot, coarsely grated
  • 3 green onions, (scallions) thinly sliced

Method

    Place mayonnaise and white wine vinegar in a screw-top jar, shake well.

    Place dressing in a large bowl with white cabbage, red cabbage, carrot and green onions (scallions), toss gently to combine.
