Broccoli and cheese frittata

- 400 gram (12½ ounces) broccoli
- 1 cup (120g) coarsely grated cheddar cheese
- 7 eggs
- 1/3 cup (80ml) pouring cream
Method
Broccoli and cheese frittata
- 1Preheat oven to 180°C/350°F. Grease 20cm x 30cm (8-inch x 12-inch) lamington pan. Line base and sides with baking paper.
- 2Thinly slice broccoli; place in large saucepan of boiling water, return to the boil, drain. Rinse under cold water; drain. Pat dry with absorbent paper.
- 3Layer broccoli and cheese in pan then pour over combined eggs and cream. Cook, uncovered, in oven, about 25 minutes or until frittata sets. Cool 5 minutes before cutting into squares.
Notes
Broccoli is a great vegetable for kids to eat: it provides them with a great source of dietary fibre, as well as potassium, vitamin E, folate and beta carotene.
