Method

1.Preheat oven to slow, 150°C. Lightly grease and line a 20cm cake pan.
2.Place sultanas, sherry and water in a large saucepan. Set aside to soak for 30 minutes.
3.Bring sultana mixture to the boil. Simmer for 8-10 minutes, or until sultanas are plump and most of the liquid is absorbed.
4.Add butter and sugar. Reduce heat and simmer; stirring, until butter has melted and sugar has dissolved. Remove from heat and place base of the saucepan in cold water to cool mixture.
5.Stir eggs and vanilla through, then sifted flour and baking powder. Mix to combine.
6.Pour mixture into prepared pan. Bake for 1 hour 40 minutes, or until cooked when tested with a skewer. Allow to cool in pan before turning out on a wire rack to cool completely.
