This simple berry dessert requires only five ingredients plus pantry staples to create a delicious dessert with minimum effort and maximum reward.

Method

1.Preheat slow cooker on HIGH.
2.Remove rind from orange in long, thin strips using a zesting tool; refrigerate until serving. Juice the orange. Place slightly thawed berries, cornflour and ¼ cup of the icing sugar in slow cooker; mix well. Pour over orange juice; cook, covered, for 35 minutes.
3.Meanwhile, mix scone mix and 1 cup (250ml) water together until combined. Turn dough onto a work surface dusted lightly with extra cornflour. Using cornflour-dusted hands, flatten dough to 3cm (1¼in) thick. Cut into 4cm (1½in) rounds using a scone cutter. Re-roll scraps and repeat. Place dough rounds on top of berry mixture. Cover slow cooker insert with a clean tea towel, then replace cooker lid. Cook, covered, for a further 1 hour or until scone topping is cooked through.
4.Dust with remaining icing sugar; top with orange rind.

Wheaten cornflour will give a better texture to the sauce; you can use regular cornflour, if preferred.
