1.Crumble Weet-Bix into a small bowl. Peel banana, then coarsely chop. Remove seeds from dates, then coarsely chop.
2.Place seed mix in the bowl of a food processor and pulse until seeds are chopped into smaller pieces.
3.Add Weet-Bix, banana, dates, vanilla, cinnamon and 2 tablespoons of the coconut to the food processor bowl with the seed mix. Process until mixture just starts to clump together.
4.With clean, damp hands, roll heaped tablespoons of the mixture to make 16 balls.
5.Place remaining coconut on a plate. Roll balls lightly in coconut to coat. Refrigerate for 1 hour or until chilled and firm.

Bliss balls can be stored in an airtight container in the fridge for up to 1 week.
