1.In a small bowl, combine tuna, shallot, herbs, juice and sauce; season to taste.
2.Cut each wrapper into four triangles. Heat oil in wok; deep-fry triangles, in batches, until crisp. Drain on absorbent paper.
3.Place triangles on serving platter; top with a heaped teaspoon of tuna mixture and a coriander leaf.
