1.Heat the oil in a medium pan, then add the onion, chilli, garlic and capsicum and cook, stirring, until the onion is soft.
2.Add the undrained, crushed tomatoes and bring to the boil, simmer, uncovered, stirring occasionally for about 5 minutes or until the mixture thickens slightly.
3.Transfer the mixture to a bowl and refrigerate until cooled.
4.Stir in the coriander and season to taste with salt and pepper before serving.
Salsa, or “sauce”, can be used as a dip with vegetables and corn chips or bread; or serve it with grilled meat, fish, chicken or vegetables. This recipe can be made a day ahead.Note
