Method

1.In a small bowl, place tomatoes, retaining as much of the juice as possible, on top of burghul. Cover; refrigerate for at least 2 hours, or until burghul is soft.
2.In a large bowl, combine parsley, onion and mint with burghul mixture and remaining ingredients; toss gently to combine. Serve.

Not suitable to freeze. Not suitable to microwave.
