Beetroot salsa


1.Make beetroot salsa. Combine ingredients in a medium bowl, season.
2.Meanwhile, heat oil in a large frying pan, cook steaks 2-3 minutes each side or until cooked as you like. Cover, stand for 5 minutes.
3.Sandwich caramelised onion, steaks, beetroot salsa, tomato, rocket and aioli between toast slices.

Aïoli can be made easily at home: Combine ½ cup whole-egg mayonnaise and 1 crushed garlic clove in a small bowl. Season to taste.
