Method

1.Preheat oven to 200°C (180°C fan-forced). Place tomatoes, cut-side up, in a single layer, in a large baking dish. Combine sea salt, pepper, thyme, garlic and olive oil; drizzle over tomato.
2.Roast, uncovered, for 1 hour or until the tomato softens and browns lightly. Drizzle tomato with oregano, thyme and olive oil.

Roast the tomatoes in a baking dish with deep sides; this shields them from the heat so they won’t burn.
