1.Boil, steam or microwave pumpkin until tender; drain.
2.Combine instant mash, the water and buttermilk in large heatproof bowl. Stir in pumpkin, corn and parsley; stand 5 minutes.
3.Toast sesame seeds in a small frying pan, over medium heat, shaking pan occasionally, about 3-5 minutes or until golden and fragrant.
4.Shape mixture into eight patties; coat with sesame seeds.
5.Cook patties in batches, in heated oiled large frying pan, until heated through.

Instant mash is a dried mashed potato mix reconstituted with boiling liquid to give a light buttery flavour. It is available from most supermarkets.
