Ingredients

Method

1.Heat vinegar, the water and salt in medium non-reactive pan until hot; do not boil. Add mushrooms; simmer gently, uncovered, 5 minutes. Drain; discard vinegar mixture.
2.Combine hot mushrooms, thyme and garlic in large heatproof bowl; mix well. Pour oil over mushroom mixture, taking care as it will bubble.
3.Place mushroom mixture in hot sterilised jar. Add oil; ensure mushrooms are covered completely. Leave 1cm space between mushrooms and top of jar; seal jar.
