Jerk salmon with black bean salad

Pan-fried in a fragrant spice mix, this jerk salmon tender, flaky and utterly delicious. Serve with a fresh homemade corn and black bean salad for a real flavour kick!

Ingredients

Method

1.Combine ground coriander, dried thyme, cinnamon, chilli, allspice and garlic in a small bowl; rub all over salmon.
2.Meanwhile, cook corn in boiling water for 6 minutes or until tender. Drain; cool.
3.Lightly spray a large non-stick frying pan with oil. Cook salmon, over medium heat, for 3 minutes each side or until just cooked.
4.Meanwhile, remove kernels from corn. Combine corn with beans, tomato, avocado, onion, coriander and combined olive oil and lime juice in a large bowl.
5.Serve salmon with salad; accompany with lime wedges, if you like.

Black beans are available from specialty food stores. You can substitute kidney or cannellini beans, if you like ­ just be aware the sodium level of canned beans can be high, try to buy low-sodium wherever possible.
