1.Combine tomato, onion, capsicum, coriander, juice, sauce and one tablespoon of the oil in medium bowl.
2.Heat remaining oil in medium frying pan. Cook tortillas, one at a time, until browned lightly both sides; drain on absorbent paper. Cover to keep warm.
3.Fry eggs in same heated pan.
4.Divide tortillas among serving plates; top with eggs, cheese and tomato mixture. Serve with lime wedges, if you like.
