Green tea noodle salad

This coconut noodle salad would be an excellent accompaniment to poached salmon.

Method

1.To make coconut dressing, combine coconut milk, mirin, vinegar and peanut oil in screw-top jar; shake well.
2.Cook noodles in large saucepan of boiling water until tender; drain. Rinse under cold water; drain.
3.Combine noodles, remaining ingredients and dressing in large bowl.

We bought a 200g packet of green-tea flavoured noodles from an Asian supermarket to use in this recipe.
