1.Preheat oven to 150°C (130°C fan forced).
2.Place garlic and bay leaf in small baking dish, add enough oil to dish to cover garlic. Roast, uncovered, about 45 minutes or until garlic is soft.
3.Spoon garlic and bay leaf into sterilised jars. Carefully pour enough of the oil left in dish into jars to cover garlic, seal immediately. Label and date jars when cold.
