Method

1.Boil, steam or microwave beans until tender; drain. Rinse under cold water; drain, halve lengthways.
2.To make the honey mustard dressing: Whisk ingredients in small bowl until combined; season to taste
3.Tear each mozzarella into quarters; combine in large bowl with beans, spinach, beetroot and nuts. Serve drizzled with dressing.
