This ridiculously simple bean salad only requires a few budget-friendly ingredients to make and easy to create – complete with a creamy basil dressing.

Ingredients
400 gram canned butter beans, rinsed, drained
400 gram canned borlotti beans, rinsed, drained
250 gram cherry tomatoes, quartered
180 gram bocconcini cheese
60 gram baby rocket leaves
1/2 cup roasted pine nuts
Creamy basil dressing
2 tablespoon olive oil
2 tablespoon white wine vinegar
2 tablespoon coarsely chopped fresh basil leaves
1/4 cup pouring cream
Method
Bean salad with creamy basil dressing
1. Make creamy basil dressing.
2. In a large bowl, place all salad ingredients. Pour in dressing and toss well to combine.
