Mint and lychee caprioscas

The juicy flavours of lychee and lime blend with a cheeky splash of vodka and soda water for a minty refreshment.

1.In the bottom of a large jug, place mint, sugar, limes, lychee juice and half the lychees; muddle together with rolling pin.
2.Add remaining lychees and vodka; stir to dissolve sugar. Refrigerate 1 hour to infuse.
3.To serve, fill jug with ice. Top with soda water to taste; stir to combine.
