Method

1.Boil, steam or microwave snow peas until just tender; drain. Immediately rinse under cold water; drain. Slice snow peas thinly lengthways; place in large bowl with cucumber, carrot, red capsicum, snow pea tendrils, mint leaves, coriander leaves and turkey meat.
2.To make dressing; mix together peanut oil, lime juice, brown sugar and fish sauce in screw-top jar; shake well. Drizzle dressing over salad; toss gently to combine, sprinkle with chopped peanuts.
