1.In a large non-stick saucepan, heat butter over medium heat; cook onion, stirring, for about 1-2 minutes, or until soft. Add powder and seeds; cook, stirring, for a further 1 minute, or until fragrant.
2.Stir in flour; cook for 1-2 minutes, or until mixture is dry and grainy. Remove from heat. Gradually stir in combined cream, water and stock cube.
3.Add lentils, stir for about 2 minutes, or until mixture boils and thickens slightly; simmer, uncovered, for about 8 minutes. Add vegetables; simmer, uncovered, for a further 10 minutes, or until lentils are soft.
4.Transfer curry to a large dish. Serve.
