Veal marsala

A classic Italian veal recipe, a superthin veal cutlet, drizzled in a sweet dry wine sauce.

Method

1.Heat half the butter in large frying pan; cook veal, in batches, until cooked as desired. Remove from pan; cover to keep warm.
2.Heat remaining butter in same pan; cook shallot, stirring, until softened. Add flour; cook, stirring, 2 minutes. Stir in marsala; bring to the boil. Reduce heat; simmer, uncovered, 2 minutes. Add stock; bring to the boil. Reduce heat; simmer, uncovered, about 4 minutes or until sauce is reduced by half.
3.Serve veal topped with sauce; serve with zucchini, if you like.
