1.Wash and drain quinoa. Place in a medium saucepan with stock and water. Bring to boil on high. Reduce heat to low and simmer, covered, for 15 minutes.
2.Meanwhile, combine half the oil and the coriander, garlic, ginger, lime leaves, zest and juice in a jug. Pour over tuna. Gently rub marinade into both sides of tuna. Cover. Chill for 10 minutes.
3.Fluff quinoa with a fork. Stir remaining oil and chilli through. Cover and set aside.
4.Heat char-grill or barbecue on high. Sear tuna 1-2 minutes each side, until cooked to your liking. Serve with quinoa and lime wedges. Top with coriander leaves.

Quinoa (keen-wa) is a gluten- free seed, with cooking qualities similar to rice. It is available from health food shops or delis.
