1.Cut steak into wafer thin slices (see note). Place steak, garlic and chilli in a large bowl and mix well.
2.Heat a little oil in a wok or large frypan, stir-fry steak slices in batches until browned all over, then remove from pan and set aside.
3.Heat a little extra oil in wok, add beans, stir-fry for about 2 minutes until beans are just tender. Combine fish sauce with 2 tblsp water.
4.Return steak to wok with fish sauce mixture, stir-fry until heated through then stir in basil leaves.
It’s a lot easier to slice the steak into wafer-thin strips if you partially freeze it first. Serve immediately with steamed rice. Recipe should be prepared as required.Note
