Teriyaki lamb with carrot salad

Tender grilled teriyaki lamb skewers with a refreshing and crunchy carrot salad make a great lunch or light dinner. Serve with steamed rice or noodles if you need something slightly more substantial.

1.Combine soy sauce, mirin, sugar and lamb in a medium bowl.
2.Cut white end of each green onion into 3cm lengths; discard green ends. Thread lamb and green onion pieces, alternately, on skewers.
3.Cook skewers on heated oiled grill plate (or grill or barbecue), brushing with soy marinade occasionally, until lamb is cooked as desired.
4.To make the carrot salad; combine all ingredients in a medium bowl and toss well.
5.Serve lamb with carrot salad and rice.
