1.Combine mustard, sugar and ground and fresh ginger in a small bowl. Place beef in a shallow dish; rub ginger mixture all over beef. Cover; refrigerate 3 hours or overnight.
2.Cook beef, fat-side down, uncovered, on heated oiled barbecue, 5 minutes. Turn beef; cook, covered, using indirect heat, following manufacturer’s instructions, about 1½ hours or until cooked to your liking. Remove from heat, cover; rest 15 minutes before slicing.
3.Meanwhile, combine pickled ginger and yoghurt in a small bowl.
4.Serve beef with gingered yoghurt.

The beef can be cooked in the oven, if you prefer. Preheat oven to 180°C (160°C fan-forced) and cook, uncovered, for about 1 hour.
