Method

1.Whisk eggs, plain flour, 1 teaspoon of the peanut oil and half the water in medium bowl until smooth.
2.Heat vegetable oil in deep wide saucepan. Dip pork in egg mixture; drain off excess. Deep-fry pork, in batches, until browned lightly; drain on absorbent paper.
3.Reheat oil; re-fry pork in batches until crisp. Drain on absorbent paper.
4.Heat remaining peanut oil in wok, stir-fry pineapple and capsicum until tender. Add stock, vinegar, honey and sauce; bring to the boil.
5.Blend cornflour with the remaining water in small bowl; add to wok. Stir-fry until sauce boils and thickens slightly. Return pork to wok; stir-fry until hot, season with salt and pepper. Sprinkle with coriander.
