Method

1.Using a mandoline or sharp knife, cut potato and 2 kumara into 2mm thick slices.
2.Heat enough vegetable oil in a large frying pan to come 2cm up the side of the pan; shallow-fry potato, kumara and parsnip, over medium heat in batches for 4 minutes or until golden and crisp. Drain on paper towel; season.
3.Meanwhile, heat 1 tablespoon of the olive oil in a large frying pan over medium heat; cook beef for 5 minutes each side or until cooked as desired. Remove from pan; cover to keep warm.
4.Heat remaining olive oil in same pan; cook mushrooms over medium heat, stirring for 4 minutes or until tender.
5.Add cream; bring to the boil. Reduce heat; simmer 3 minutes or until thickened and reduced slightly. Add spinach leaves; stir until just wilted. Season to taste.
6.Serve steaks topped with mushroom sauce and vegetable chips.
