1.Heat oil in a large saucepan on medium. Saute onion 3-4 minutes, until tender.
2.Add coriander, cinnamon, cumin, chilli flakes and turmeric. Cook 1 minute, stirring, until fragrant.
3.Add rice; cook, stirring, 1 minute. Blend in chicken stock and tomatoes.
4.Bring to the boil on high. Reduce heat to low; simmer, covered, 15 minutes, or until rice is just tender. Remove from heat; set aside 5 minutes.
5.Meanwhile, preheat a char-grill or barbecue plate on high.
6.Brush chicken with oil; grill 4-5 minutes each side, until cooked through. Cut in half.
7.Stir spinach through rice. Season to taste; toss gently to combine.
8.Serve pilaf topped with chicken.
