Orange vinaigrette


1.Cut oranges in half. Put each half, cut-side down, on a chopping board. Use a small sharp knife to cut off the skin and white pith. Cut the orange flesh into 3cm pieces.
2.Chop the salmon into bite-sized pieces.
3.Peel and thinly slice onion.
4.Make orange vinaigrette. Put the juice and oil in a screw-top jar; tighten the lid, then shake well. Season to taste with salt and pepper.
5.Put the cream cheese and dill in a medium bowl; season with salt and pepper. Use a fork to mash together well. Lightly wet your hands and roll one teaspoonful of the cheese mixture at a time into balls.
6.Put the orange pieces, salmon, onion, cheese balls and watercress in a medium bowl; add the dressing and toss gently to combine.
7.Place the salmon salad on a large serving platter. Crumble the bagel crisps over the top.
