1.Combine sardines, egg, breadcrumbs, parsley, mozzarella and garlic in a large bowl and season to taste.
2.Heat oil in a large saucepan, until a cube of bread sizzles on contact. Cook tablespoons of sardine mixture, in batches, for 1 minute each side or until crisp and golden. Drain on paper towel.
3.Serve fritters with lemon wedges.
