Method

1.

Cook pasta in large saucepan of boiling water, uncovered, until just tender; drain.

Meanwhile, heat oil with half of the butter in large frying pan; cook zucchini, stirring, until tender.

3.

Add remaining butter to pan with mushrooms, garlic and oregano; cook, stirring, 2 minutes then stir in juice and vinegar. Remove from heat; stir in onion and cheese.

4.

Place pasta and zucchini mixture in large serving bowl; toss gently to combine.

Risoni is a small rice-shaped pasta that can be served similarly to orzo or rice in salads and soups.
