Pork, ginger and mint larb

pork, ginger and mint larb



1.Process pork until finely minced.
2.Heat oil in large frying pan; cook pork and water, stirring, until pork is tender. Remove pan from heat, stir in juice, fish sauce and chilli; cool.
3.Place pork mixture in large bowl with onions, nuts, grated ginger, mint and coriander; toss gently to combine.
4.Serve pork salad over lettuce; sprinkle with extra chopped nuts, ginger strips and extra coriander.
