1.Heat oil in a large frying pan on low. Add onion and garlic and cook, covered, stirring occasionally, for 2-3 minutes until tender but not browned.
2.Add mushroom and cook, stirring, for 2-3 minutes.
3.Stir through cream and bring to the boil on high. Reduce heat to low and simmer for 5 minutes.
4.Toss the hot spaghetti through the cream and mushroom mixture, adding parsley. Season to taste. Serve topped with cheese.

Try canned salmon with a little lemon juice in place of mushrooms. For a healthier version, replace cream with low-fat evaporated milk. To thicken, blend 1 teaspoon cornflour with 1 tablespoon evaporated milk and stir slowly into remaining milk.
