1.Heat enough oil in large saucepan to come halfway up the side of the pan. Heat oil to medium-high, or 180°C/350°F (a cube of bread dropped into the hot oil will turn golden in about 15 seconds when oil is at the correct temperature).
2.Deep-fry french fries in batches according to direction on packet.
3.Meanwhile, cut zucchini into matchsticks. Use a mandoline or V-slicer with a julienne attachment to cut the zucchini into matchsticks.
4.Bring beer to the boil in large saucepan. Add zucchini, garlic and mussels to pan with beer and simmer. Cover and cook about 2 minutes or until mussels start to open.
5.Stir cream and herbs into pan and cook until hot and mussels are open, season. Accompany with french fries.
