20-minute Vietnamese minced pork noodles

This Vietnamese-inspired lemongrass minced pork noodle bowl is a super fast weeknight dinner. Topped with salted peanuts and a chilli dressing, with quick pickled onions for some zing, it’ll be on the table in only 20 minutes!

Method

1.

For the pickled onion, combine onion, rice wine vinegar and 1 teaspoon salt flakes in a small bowl. Stir to combine. Set aside to pickle.

Place vermicelli in a medium heat-proof bowl; cover with boiling water. Stand until just tender, drain and set aside.

Heat the oil in a wok, or large frying pan over high heat. Add the pork mince and garlic and cook for 6 minutes, stirring, breaking up the pork mince until well browned.

Add lemongrass, fish sauce, dark soy, sugar, honey, lime juice and 2 tablespoons of water. Cook, stirring, for 3-4 minutes, until sticky and caramelised.

DRESSING Combine all ingredients in a small bowl.

Divide noodles between bowls. Top with carrot, cucumber and pickled red onion. Top with pork mince mixture and coriander sprigs. Serve with the dressing and sprinkle with peanuts.

Carrots: Peeled and cut into thin matchsticks. You can use a julienne peeler, if you have one.

Vermicelli rice noodles: Vermicelli noodles are made from rice flour, so are also ideal for those avoiding gluten (look for brands with 100 per cent rice flour).

Lebanese cucumber: Seeded and sliced thinly. Make sure to use a sharp knife when preparing. You could also use a julienne peeler.

Red onion: Sliced thinly. You can use a mandoline to slice the onions, if you have one.

Salted peanuts: Finely chopped. If you have time, toast the peanuts to help amplify their flavour.
