For a quick and easy weeknight dinner that’s packed with flavour, look no further than this lemongrass pork with noodles recipe. In just under 20 minutes, you can create a mouth-watering dish inspired by Southeast Asian cuisine.

With minimal ingredients and simple steps, this delicious dish delivers big on taste, as pork mince is infused with aromatic lemongrass, Makrut lime leaves, chilli and sesame oil.

Method

Combine pork mince, lemongrass, lime leaves, chilli and sesame oil in a large bowl.

Place Pad Thai noodles into a heat-proof bowl and cover with boiling water. Stand until tender.

Meanwhile, heat a deep non-stick frying pan over a high heat and add pork mince mixture, stirring until mince is lightly browned. Add black bean sauce, brown sugar and fish sauce; stir to combine. Add the spinach leaves and allow to wilt.

4.

Strain noodles and add to pan; gently fold into mince mixture.

5.

Serve with lime wedges.

This sauce can also be served with spaghetti or spooned over steamed white rice.
