Lemongrass marinade


1.To make lemongrass marinade; blend or process ingredients until chopped finely.
2.Shell and devein prawns, leaving tails intact. Combine prawns with marinade in medium bowl; stand 10 minutes.
3.Stand noodles in medium heatproof bowl of boiling water about 10 minutes or until softened. Drain; rinse under cold water, drain.
4.Meanwhile, combine oil, sauces and vinegar in large bowl. Add sprouts, mint, nuts, chilli and noodles; mix gently.
5.Cook prawns in heated oiled large frying pan until changed in colour. Add prawns to noodle mixture; toss gently.
