Method

1.Cook fish in large heated oiled frying pan until browned lightly both sides and cooked through.
2.Meanwhile, melt butter in small saucepan, add rind, juice and ginger; cook 1 minute. Stir in parsley and onion.
3.Serve sauce over fish.

Serve with lemon wedges.
